Smoked Chicken in Creamy Turmeric Fern-shoot Gravy

Smoke Chicken in Creamy Turmeric Fernshoot Gravy
(Coated Wok with lid 30cm)


Ingredients:
1 whole chicken
2 tablespoons turmeric powder
1 teaspoons of salt

Ingredients to blend:
35 grams bird’s eye chilli
250 grams red onions
60 grams garlic
60 grams lemongrass
60 grams turmeric
60 grams ginger
1 stalk fern-shoots
8 pieces dried tamarind
300 grams coconut milk
15 grams turmeric powder
300 ml water
Salt to taste

Method:
Chicken

  1. Marinate the chicken with the turmeric and salt for approximately 3 hours
  2. Grill or smoke the chicken on a charcoal stove or grill in your desired method.

Gravy:

  1. Blend all the items to make a paste.
  2. Boil the water in a pot and pour in the paste. Cook the gravy til it becomes fragrant.
  3. Put in the chicken into the pot.
  4. Put in the fern-shoots.
  5. Lastly, pour in the coconut milk and salt. Cook further til ready.

 


 

Ayam Salai Lemak Cili Api Pucuk Paku

Bahan-bahan:
1 ekor ayam
2 sudu besar kunyit
1 sudu teh garam

Bahan kisar:
35 gram cili padi
250 gram bawang merah
60 gram bawang putih
60 gram serai
60 gram kunyit hidup
60 gram halia
1 ikat pucuk paku
8 asam keping
300 gram santan pekat
15 gram serbuk kunyit
300 ml air
Garam secukup rasa

Penyediaan:
Ayam

  1. Perap ayam bersama kunyit dan garam selama 3 jam.
  2. Bakar ayam tadi di atas dapur arang atau salai mengikut keselesaan.

Kuah

  1. Kisar bahan-bahan sehingga menjadi pes.
  2. Panaskan air sehingga mendidih dan masukkan bahan-bahan kisar, rebus pes tadi sehingga naik bau.
  3. Masukkan ayam yang telah disalai tadi.
  4. Masukkan pucuk paku.
  5. Masukkan santan dan garam secukup rasa.
